APPEARANCE: Following an over-ripening process between 10/ 25 days. The grapes are kept on the vine where a twisting of the bunch peduncle takes place, remaining so for another 10 /20 days. It is then harvested in early December and finishes the last stage of drying, this time in the fruttaia, on trellises for 60/90 days vertically
VINIFICATION: Pressed by hand and vinified in red for 15/20 days. Until the balance between
sugars and alcohol, spontaneous malolactic fermentation.
AGING: 24 months in barriques, 12 months in bottle
PRODUCTION: 1,000 Bottles

ALCOHOL GRADATION: 12.50 - 14.5% vol.
