The care of the Vineyards
The winemaking process of Al-Cantàra wines is a fascinating journey that begins with meticulous attention to agriculture and culminates in bottling. The quality of the wine is directly linked to the care and management of the vineyards, where every choice is guided by the idea that a good wine always starts from an excellent raw material.
Al-Cantàra employs the GREEN MANURE technique, an organic and traditional method of soil fertilization that enriches the soil without the use of chemicals.
THE MANAGEMENT OF THE VINEYARDS IS CARRIED OUT ENTIRELY BY HAND, and the harvest is a crucial moment, entrusted to experienced women who know how to recognize the clusters at different stages of ripening. Their skill is crucial in accurately selecting the best fruit, keeping the unique characteristics of each wine intact.

Listening to the Vines, Selective Manual Harvesting.
The HARVEST is therefore guided by a philosophy that we can call "listening to the vines."
The rows are visited several times and at different times to harvest clusters that reach ideal ripeness. This process is very laborious, but it allows the nuances of each individual grape variety to be emphasized and to determine which type of wine to produce. Within the same vineyard, in fact, cluster ripening never occurs uniformly, and this method of harvesting is critical to the creation of distinctive wines.
Al-Cantàra believes in cultivar enhancement, producing mainly wines from single varietals in purity.
14 of the 15 wines produced, follow this philosophy, allowing the elegance and distinctive characteristics of the native grape varieties Nerello Mascalese, Nerello Cappuccio and Carricante to be fully expressed. The winery does not stop there; it also explores international grape varieties such as Pinot Noir and Cabernet Sauvignon.

The Use of Inert Gases
The stages from destemming to bottling, thus the most delicate moment of must and wine management. Al-Cantàra manages it with the contribution of inert gases. We use nitrogen and carbon dioxide, to treat musts in the absence of oxygen. With the aim of avoiding any oxidative process that would alter the organoleptic qualities of the wine.

Pressing
During pressing, we use a Soft Pneumatic Press that not only preserves the integrity of the grapes, but also minimizes grape-seed breakage, avoiding the risk of vegetal hints or overly pronounced tannin.
These methodologies guarantee an aromatic purity that distinguishes our wines.
Temperatures
Temperature management throughout the winemaking process is equally important: it avoids issues that could compromise the organoleptic characteristics of the wine and thus allows a significant reduction in the use of sulfites. added.
In fact, Al-Cantàra's white wines contain a maximum of 70 mg/L of added sulfites, almost half the limit allowed for organic wines.
The Refinement
Coming to aging, Al-Cantàra uses French oak and Etna chestnut barrels, carefully choosing the size according to the label, favoring barrels fin'anche the fifth passage.
This method allows the wine to be enriched without overpowering its elegance with woody hints. It favors a harmonious and controlled maturation that fully expresses the refinement of the Etna grape varieties.

YOUNG AND FRUITY RED WINES
Young red wines of great freshness, rich in floral notes and red fruit. Vinified in purity with native Etna grape varieties. With maturation ranging from steel only, to chestnut barrels.
STRUCTURED, LONG-LIVED RED WINES
Red wines of great depth and structure. Great elegance and freshness distinguish a line of wines made purely from ANCIENT Nerello Mascalese grapes and international varietals of Cabernet and Pinot Noir.
